Perfect for a baby shower!
Filled with lemon curd and topped off with lemon-flavoured frosting. I used a basic sponge cake recipe for this (click here) but I also included the grated zest of a lemon and the juice of half a lemon.
Once cooled, I injected them with lemon curd.
For the frosting, I used the standard mix and added a couple of teaspoons of lemon juice along with some yellow food gel.
