Lemony Cupcakes
Perfect for a baby shower!
Filled with lemon curd and topped off with lemon-flavoured frosting. I used a basic sponge cake recipe for this (click here) but I also included the grated zest of a lemon and the juice of half a lemon.
Once cooled, I injected them with lemon curd.
For the frosting, I used the standard mix and added a couple of teaspoons of lemon juice along with some yellow food gel.

Birthday Carrot Cupcakes
Carrot cupcakes are definitely my favourite and this is the tried and tested recipe from BBC Food that I've found to be the best: http://www.bbcgoodfood.com/recipes/470640/carrot-and-cream-cheese-cupcakes. I'd definitely recommend adding the juice of the orange into the mix, because otherwise, it's too dry.
I use the frosting in the recipe as well because it's not too cheesy.

Guilt free cake!!
Fundraising event for East Africa famine relief:
Guilt-free cake? Yes! (Well, sort of!)
You’re probably aware of the severe drought that’s hit East Africa and has caused a major famine that’s affecting millions.
I’d like to do something to help, so am holding and tea and cake morning to raise some money, that will go directly to an organisation in Kenya who provide famine relief.
I’d love it if you could come along and help me, by buying and eating the top quality and delicious homemade cakes..and supporting an important cause at the same time:
St Catherine's Church, Church Road, Tranmere CH42 OLQ
